Anything Drop Biscuits

Life doesn't give us all rich parents or alot of time, so this is a fast, easy and economical recipe for drop biscuits.  It makes 24 biscuits, and they're tasty and filling.

You will need:

1 kg (or 2 lbs) plain white flour
1 1/2 tsp. baking soda (sodium bicarbonate)
1 1/2 tsp salt
1 tbsp. active dry yeast
1/3 cup of palm kernel oil, lard, or schmaltz
enough water to make a cohesive but very wet batter

Preheat your oven to 150 Celsius or 300 degrees Farenheit, and grease a large cookie sheet.

1. Put all the dry ingredients in a big bowl, and whisk them together to get some air through it.

2. Add the oil and stir until it's somewhat crumbly.

3. Add 2 or 3 cups of water.  If this isn't enough, keep adding a bit at a time until you have a wet but not completely liquid batter.  You should be able to spoon chunks of it out without it falling apart.

5.  Spoon two or three tablespoon sized hunks of batter onto your cookie sheet.  Usually 12 will fit on a pan.

6.  Bake for 15 to 20 minutes or until you can see that they're brown on the bottom and splitting a little on the top.  Then bake them for a couple more minutes just to be sure.

7.  Remove from the oven, and allow them to cool on the pan for a few minutes.

8.  When they're just cool enough to touch, remove them from the pan with a spatula if they are sticking a little.

Before baking, you can fold in raisins, nuts, granola, chocolate chips, or whatever suits your fancy
